Spinach, Asparagus and Feta Quiche

Maybe this magnificant spring quiche will lure her out...



Spinach
Asparagus
Green Onion
Feta
4 large eggs
1/4 cup milk
2 T. Sour cream
Salt and pepper


Steam asparagus, steam chopped spinach and drain. Put them + onion and feta in pie crust. In a separate bowl mix egg, milk, salt and pepper and sour cream. Pour over ingredients. Bake at 350 for 35 minutes or until knife comes out clean.

  2. I had quiche this past weekend for the first time in a LONG time. I had forgotten how much I love it. Need a breakfast dish I can freeze for a large group I'm serving in a week. This would work, right?? Please say yes.

  5. That looks delicious, but how do you make the pie crust so thin and crumbly looking? Even when I blind-bake I end up with soggy pastry. Hope baby now here, by the way.

  6. Here you go...

    Current spinach smoothie favorite:

    1 cup Mango Berry Fruit Blend (from Target, has whole strawberries, mango & pineapple chunks)

    1 frozen banana (I cut ripe banana's into bite size pieces and freeze them in a small zip lock baggie)

    1 cup plain yogurt

    Place all above items in blender. Add juice to almost cover the items. I like Juicy Juice Apple Raspberry.

    Top with two big handfuls of spinach.

    Blend until the spinach is completely combined.

    I change up the fruit a lot, but this combo is my favorite. My 2 year old loves them too!

  7. Forgot one healthy part - 2 Tablespoons ground Flax Seed. It's good for you and the baby :-)

    The smoothie is great with or without it.
